Ingredients
  

For the Cake
  • 2 cups all-purpose flour (or a gluten-free flour blend)
  • 1 cup sugar (can substitute with coconut sugar)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsweetened applesauce (or 2 mashed bananas for a unique twist)
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs (can replace with chia egg for vegan)
  • 1 teaspoon vanilla extract
For the Apple Layer
  • 4 cups peeled and sliced apples (Granny Smith or Honeycrisp work beautifully)
  • 1 tablespoon lemon juice
  • ½ cup sugar (or less, depending on your sweetness preference)
  • 1 teaspoon ground cinnamon
For the Crumb Topping
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup unsalted butter (or vegan butter, melted)
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Stir until evenly mixed.
  3. In another bowl, whisk together the applesauce, vegetable oil, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. In a large bowl, toss the apple slices with lemon juice, sugar, and cinnamon.
Assembly
  1. Layer half of the cake batter into your prepared baking dish, then spread the apple mixture evenly over it. Top it off with the remaining batter.
  2. For the crumb topping, mix together flour, brown sugar, melted butter, and cinnamon until crumbs form. Sprinkle it generously over the cake.
Baking
  1. Pop your creation into the oven for about 45-50 minutes, or until the cake is set and a toothpick comes out clean.
  2. Let it cool down before serving.
