Ingredients
  

For the Ladyfinger Cookies
  • 4 large large eggs Separated into whites and yolks
  • 1/2 cup granulated sugar For the yolk mixture
  • 1 teaspoon vanilla extract Can substitute with almond extract
  • 1 cup all-purpose flour Can be substituted partially with almond flour
  • 1/4 teaspoon salt
  • as needed powdered sugar For dusting before baking

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Separate the egg whites and yolks. In a large bowl, whisk the yolks with the granulated sugar and vanilla extract until creamy and pale.
  3. In another bowl, beat the egg whites until soft peaks form. Gently fold the whipped egg whites into the yolk mixture.
  4. Sift the flour and salt over the batter and gently fold until fully incorporated, aiming for a smooth mixture.
  5. Using a piping bag, pipe long strips onto the prepared baking sheets. Dust lightly with powdered sugar.
Baking
  1. Place the piped ladyfingers in the oven and bake for about 12-15 minutes, or until golden and firm to the touch.
Cooling
  1. Once baked, let the ladyfingers cool on a wire rack.

Notes

Ladyfingers can be made a day in advance and stored in an airtight container. For more flavor, add a pinch of cinnamon or nutmeg. Vegan options include using aquafaba for egg whites.
