  • 2 zest of 2 lemons
  • 1/2 teaspoon cream of tartar Helps retain chewy texture.
  • 1 teaspoon lemon extract (optional) For extra flavor.

Preparation
  1. In a heavy-bottomed saucepan, combine the sugar and water. Stir gently over medium heat until the sugar is fully dissolved (about 5 minutes).
  2. Add the fresh lemon juice, zest, and cream of tartar. Allow the mixture to come to a gentle boil without stirring (about 10 minutes).
  3. Attach a candy thermometer to the saucepan and monitor the temperature until it reaches the hard crack stage at 300°F (149°C). Remove from heat.
  4. Carefully pour the mixture onto a parchment-lined baking sheet and let it cool and set for about 10-15 minutes at room temperature.
  5. Once firm, break it into pieces or cut into squares. Dust with sugar to prevent sticking.
