- In a heavy-bottomed saucepan, combine the sugar and water. Stir gently over medium heat until the sugar is fully dissolved (about 5 minutes).
- Add the fresh lemon juice, zest, and cream of tartar. Allow the mixture to come to a gentle boil without stirring (about 10 minutes).
- Attach a candy thermometer to the saucepan and monitor the temperature until it reaches the hard crack stage at 300°F (149°C). Remove from heat.
- Carefully pour the mixture onto a parchment-lined baking sheet and let it cool and set for about 10-15 minutes at room temperature.
- Once firm, break it into pieces or cut into squares. Dust with sugar to prevent sticking.
