Ingredients
  

Dough Ingredients
  • 1.25 cups warm water (105°F to 110°F)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 tablespoon granulated sugar
  • 3 cups all-purpose flour (more for dusting)
  • 1 teaspoon salt
Boiling and Topping Ingredients
  • cup baking soda (for boiling)
  • 1 large egg (for egg wash)
  • Coarse sea salt (for sprinkling)
  • 1 tablespoon sugar (for optional cinnamon sugar, mix with 1 teaspoon cinnamon)

Method
 

Preparation
  1. In a bowl, mix the yeast, warm water, and sugar. Let sit for about 5 minutes until frothy.
  2. In a large bowl, combine the flour and salt. Gradually pour in the frothy yeast mixture and stir until a dough forms.
  3. Transfer the dough to a floured surface and knead for about 5-8 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for about an hour, or until it doubles in size.
Cooking
  1. Preheat your oven to 450°F (230°C) and prepare a baking sheet lined with parchment paper.
  2. Bring a large pot of water to a gentle boil and stir in the baking soda.
  3. Punch down the risen dough and divide it into small pieces (approximately 1-inch sections). Roll each piece into a rope and cut into bite-sized pieces.
  4. Gently place the pieces in the boiling water for about 30 seconds, then remove with a slotted spoon and place on the baking sheet.
  5. Beat the egg and brush it over the pretzel bites. Sprinkle with coarse sea salt.
  6. Bake in the oven for 10-12 minutes or until golden brown.
