  • 1 cup long-grain white rice Rinsed under cold water
  • 2 cups chicken or vegetable broth For added flavor
  • 1 tablespoon olive oil For sautéing
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt Or to taste
  • 1/4 teaspoon black pepper To taste
  • 1 cup diced tomatoes Fresh or canned
  • 1/4 cup green bell pepper, chopped Optional
  • Fresh cilantro For garnishing

Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic, cumin, and smoked paprika and toast for about a minute.
  5. Add the rinsed rice to the pan, stirring well to coat with the oil and spices and cook for an additional 2-3 minutes until lightly toasted.
  6. Pour in the broth, diced tomatoes, and season with salt and pepper. Toss in bell pepper if using.
  7. Bring everything to a gentle boil, then reduce the heat, cover, and let it simmer for about 20 minutes.
  8. After 20 minutes, remove from heat but keep covered for another 5 minutes to absorb moisture.
  9. Fluff the rice gently with a fork and sprinkle with fresh cilantro before serving.
