For the Truffles
  • 8 ounces cream cheese, softened Use plant-based cream cheese for a vegan option.
  • 1 cup powdered sugar
  • 1/2 cup crushed strawberries (fresh or frozen) Ensure to thaw and drain frozen strawberries to avoid excess moisture.
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs (plus extra for coating)
  • 1 cup chocolate chips (white or dark) Different flavored chocolates can be used for dipping.

Method
 

Preparation
  1. Beat the softened cream cheese in a bowl until smooth, about 1 minute.
  2. Gradually add powdered sugar and mix until fully combined.
  3. Fold in the crushed strawberries and vanilla extract until evenly mixed.
  4. Add graham cracker crumbs to the mixture and mix until combined.
  5. Refrigerate the mixture for about 30 minutes to firm up.
Shaping and Coating
  1. Scoop out small portions of the chilled mixture and roll into balls about the size of a teaspoon.
  2. Place the truffles on a lined baking sheet, keeping hands slightly moist to prevent sticking.
  3. Melt chocolate chips in a microwave-safe bowl in short intervals, stirring in between.
  4. Dip each truffle into the melted chocolate and cover completely, letting excess drip off.
  5. Roll the truffles in extra graham cracker crumbs for a cheesecake crust feel.
Setting
  1. Allow the truffles to set on the baking sheet before transferring to an airtight container.
