Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small saucepan, melt the butter over medium heat, then stir in the honey and minced garlic. Allow to bubble for about a minute, watching carefully to prevent burning.
- In a large bowl, toss the baby carrots with the honey-garlic mixture, ensuring each piece is well coated. Season with salt and pepper.
- Spread the coated carrots in a single layer on the lined baking sheet, ensuring they are not overcrowded.
Cooking
- Roast the carrots in the preheated oven for approximately 25-30 minutes, tossing halfway through to ensure even browning.
- The carrots are done when they are tender when pierced with a fork and slightly golden.
- Let the carrots cool for a minute, then transfer to a serving dish and garnish with fresh parsley.
