Ingredients

For the marinade
  • 4 tablespoons honey
  • 3 tablespoons soy sauce (low-sodium) low-sodium works great here
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated optional, but adds a lovely kick
Main ingredients
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon sesame seeds for garnish
  • Chopped green onions for garnish
  • Salt to taste
  • Pepper to taste
  • Lime wedges optional, to brighten up the dish

Method

Marinating shrimp
  1. In a bowl, mix the honey, soy sauce, minced garlic, and grated ginger until well combined.
  2. Toss the shrimp in this marinade, ensuring each piece is coated. Allow them to soak for about 10-15 minutes.
Cooking shrimp
  1. Heat a large skillet over medium-high heat and add the olive oil.
  2. Once the oil is hot, add the marinated shrimp to the skillet in a single layer, cooking for about 2-3 minutes on each side until the shrimp are opaque and pink.
  3. Pour the leftover marinade into the pan, letting it bubble and reduce for 1-2 minutes until thick and sticky.
  4. Adjust seasoning with salt and pepper to taste.
Serving
  1. Plate the honey garlic shrimp over steamed rice or quinoa, drizzling the sauce over everything.
  2. Sprinkle with sesame seeds and chopped green onions. Add lime juice for extra zest if desired.

Notes

For a plant-based option, substitute shrimp with tofu or chickpeas. To adjust flavors, consider adding red pepper flakes for heat or fresh herbs for freshness. Use pre-cooked shrimp for a quicker version of this dish.
