  • 1 lb boneless, skinless chicken thighs (or breasts) You can use chicken breasts instead, but be mindful of cooking time.
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2-3 tablespoons harissa paste Adjust to your spice preference.
  • Salt and pepper to taste
For the Bowl
  • 2 cups cooked grain (quinoa, brown rice, or couscous) Any of these grains work well.
  • 1 cup fresh spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup tahini dressing or tzatziki (store-bought or homemade)
Optional Toppings
  • Fresh herbs like parsley or cilantro
  • Sliced avocado
  • Lemon or lime wedges

Method
 

Preparation
  1. In a bowl, mix the olive oil, honey, harissa, salt, and pepper.
  2. Add the chicken thighs, ensuring they’re well-coated in the mixture.
  3. Cover and let this sit for at least 30 minutes to deepen the flavors.
  4. Prepare your grains according to package instructions.
Cooking
  1. Heat a skillet over medium-high heat.
  2. Add the marinated chicken and cook for about 6-7 minutes on each side, or until beautifully browned and cooked through.
Assembly
  1. Chop the veggies: spinach, tomatoes, cucumber, and red onion.
  2. When the chicken is done, let it rest for a few minutes before slicing.
  3. Place a scoop of grains at the bottom, top with the fresh veggie mix, and then add the sliced chicken.
  4. Drizzle tahini dressing over the top, and sprinkle with feta and herbs.
  5. Serve with lemon or lime wedges for a refreshing zing.
