Preparation
- Pat the chicken dry and season lightly with salt and pepper.
- Heat 2 tablespoons oil in a large skillet over medium-high heat until shimmering.
- Add chicken in a single layer; don’t crowd the pan — work in batches if needed. Sear until golden and cooked through, about 4–6 minutes per side for bite-size pieces. Remove and set aside.
- In the same pan, add the remaining tablespoon of oil and toss in the broccoli. Stir-fry for 2–3 minutes until it brightens and gets some char.
- Add a splash of water and cover for a minute to steam until crisp-tender. Transfer broccoli to the plate with the chicken.
Cooking
- Lower heat to medium and add garlic and ginger to the pan. Cook until fragrant, about 30 seconds — don’t let it burn.
- Pour in soy sauce, honey, rice vinegar, sesame oil, and brown sugar (if using). Stir to combine and let the mixture bubble gently for 1–2 minutes so the flavors meld.
- Stir in the cornstarch slurry and cook, stirring, until the sauce thickens and becomes glossy.
- Return chicken and broccoli to the pan and toss to coat thoroughly.
- Finish with a sprinkle of toasted sesame seeds and sliced green onions. Serve hot over rice or noodles.

For a lighter option, serve atop brown rice or quinoa with extra steamed vegetables. Leftovers reheat well in a skillet; add a splash of water if the sauce tightens.
