Ingredients
  

Dough Ingredients
  • 3.5 cups all-purpose flour (plus extra for dusting)
  • 0.25 cups granulated sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 cups milk (warm)
  • 0.25 cups water (warm)
  • 0.25 cups unsalted butter (melted)
  • 1 large egg (lightly beaten)
  • 1 cups mixed dried fruit or raisins
Glaze
  • 0.25 cups apricot jam (or honey) mixed with a splash of water
Optional Flavoring
  • 1 zest of 1 orange or lemon for extra zing

Method
 

Preparation
  1. In a large mixing bowl, combine 2 cups of flour, sugar, yeast, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together the warm milk, warm water, melted butter, and beaten egg.
  3. Pour the wet ingredients into the dry ingredients and stir until combined.
Kneading
  1. Sprinkle flour on your work surface, spill out the dough and knead for about 8-10 minutes until smooth and elastic.
  2. Shape the dough into a ball and place it in a greased bowl, covering it with a damp cloth.
  3. Let it rise in a warm spot until it doubles in size, about an hour.
Shaping Buns
  1. Punch down the risen dough to release air and fold in the mixed dried fruits and optional citrus zest.
  2. Divide the dough into 12 equal pieces and shape them into buns.
  3. Place on a greased baking sheet, ensuring they are close but not touching, and cover with a cloth for another 30 minutes.
Baking
  1. Preheat the oven to 375°F (190°C).
  2. Bake the buns for about 20-25 minutes or until golden brown.
  3. Brush the warm buns with your apricot glaze to finish.
