Preparation
- In a large mixing bowl, combine 2 cups of flour, sugar, yeast, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the warm milk, warm water, melted butter, and beaten egg.
- Pour the wet ingredients into the dry ingredients and stir until combined.
Kneading
- Sprinkle flour on your work surface, spill out the dough and knead for about 8-10 minutes until smooth and elastic.
- Shape the dough into a ball and place it in a greased bowl, covering it with a damp cloth.
- Let it rise in a warm spot until it doubles in size, about an hour.
Shaping Buns
- Punch down the risen dough to release air and fold in the mixed dried fruits and optional citrus zest.
- Divide the dough into 12 equal pieces and shape them into buns.
- Place on a greased baking sheet, ensuring they are close but not touching, and cover with a cloth for another 30 minutes.
Baking
- Preheat the oven to 375°F (190°C).
- Bake the buns for about 20-25 minutes or until golden brown.
- Brush the warm buns with your apricot glaze to finish.
