Method
Marinating the chicken
- Pour the buttermilk into a bowl and add a pinch of salt and pepper. Submerge the chicken pieces in the buttermilk, covering them well. Let this marinate for at least 30 minutes, or several hours for more flavor.
Preparing the coating
- In a separate bowl, mix the flour, paprika, garlic powder, and onion powder. This mix will provide a flavorful crust.
Cooking the chicken
- Dredge each piece of marinated chicken in the flour mixture, shaking off excess before placing it in the hot oil.
- Fry the chicken until golden brown and cooked through, about 6-7 minutes per side, depending on thickness. Avoid moving it around too much while frying.
Making the glaze
- In a small saucepan over low heat, combine honey, hot sauce, and optional butter. Stir until the butter is melted and the mixture is well combined. Adjust spice level as desired.
Serving
- Once the chicken is done, place it on a paper towel-lined plate to absorb excess oil, then drizzle the hot honey glaze over the warm chicken.

Notes
For a vegan version, substitute chicken with cauliflower or tempeh and use plant-based milk for marinating. You can also use pre-cooked chicken to save time, simply glaze and heat.
