Wet Ingredients
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 3 large eggs
  • 0.5 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 cup crushed pineapple, drained
  • 1 cup chopped pecans (optional) Feel free to substitute walnuts for pecans.
Frosting
  • 1 batch cream cheese frosting Store-bought or homemade

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
Mixing
  1. In another bowl, combine both sugars, eggs, oil, and vanilla extract. Beat this mixture until smooth.
  2. Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  3. Fold in your mashed bananas, crushed pineapple, and chopped pecans if using.
Baking
  1. Spoon the batter into the cupcake liners, filling them about two-thirds full.
  2. Bake in your preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
  3. Let the cupcakes cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
Frosting
  1. Once cooled, slather on the cream cheese frosting using a piping bag or a knife.
