Preparation
- Warm the olive oil in a large, heavy-bottomed pot over medium heat. Add the finely chopped onions and sauté until translucent and soft for about 5-7 minutes.
- Stir in the minced garlic and cook for another minute.
- Sprinkle in the sweet paprika, salt, and pepper, and let them cook for about 30 seconds.
- Add the chicken thighs to the pot, skin-side down, and brown both sides for approximately 5 minutes per side.
- Pour in the chicken broth, scraping up any caramelized bits from the bottom of the pot. Bring to a gentle boil, then lower the heat, cover, and simmer for 30-35 minutes.
- Whisk together sour cream and flour (if using) in a bowl, then stir it into the pot and let it cook for another 5-10 minutes until the sauce thickens.
Serving
- Garnish with fresh parsley and serve over egg noodles or traditional nokedli.

Notes
This recipe can be prepared in advance and stored in the fridge for up to 3 days. It also freezes well for up to 3 months. For a spicy version, consider adding cayenne pepper or hot sauce. For a vegetarian alternative, substitute chicken with mushrooms and zucchini, and adjust the recipe accordingly.
