Preparation
- Set the Instant Pot to Sauté and warm the olive oil.
- Add the diced onion and cook until translucent, about 3–4 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add chicken pieces, toss to brown for a minute, and season with salt, pepper, and thyme.
Cooking
- Pour in the rice and stir to coat it in the oil and juices.
- Add chicken broth, scraping the bottom of the pot to lift any browned bits.
- If using frozen peas and carrots, add them now.
- Seal the pot and cook on Manual/High Pressure for 8 minutes.
- Allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
- Open the lid and stir in the heavy cream and Parmesan or cream cheese until smooth.
Finishing Touches
- If desired, mix cornstarch and water, bring the pot to Sauté for 2–3 minutes, and stir in the slurry until thickened.
- Taste and adjust seasoning. If the rice looks too loose, sauté for a few minutes; if too thick, stir in a splash of broth.
