Instant Pot Irish Stew

Ingredients
  

For the stew
  • 1.5 pounds beef chuck, cut into 1-inch cubes You can also substitute with lamb or chicken.
  • 4 medium Yukon Gold potatoes, peeled and diced Any other type of potatoes can be used.
  • 3 medium carrots, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth Can substitute with vegetable broth for a vegan option.
  • 1 tablespoon tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt Or to taste.
  • 1/2 teaspoon black pepper
  • 2 leaves bay leaves
  • 1/2 cup frozen peas, optional For color and sweetness.
  • Fresh parsley, for garnish

Method
 

Preparation
  1. Gather all your ingredients.
  2. Set your Instant Pot to the sauté mode and add a drizzle of olive oil.
  3. Once hot, add the beef chunks, seasoning them with salt and pepper. Brown the meat for about 4-5 minutes.
  4. Add the onions and garlic, stirring for about 2 minutes until fragrant.
  5. Mix in the tomato paste, Worcestershire sauce, thyme, and bay leaves.
  6. Pour in the beef broth and scrape any brown bits from the bottom of the pot.
  7. Add the potatoes and carrots, then secure the Instant Pot lid.
Cooking
  1. Set the Instant Pot to high pressure and cook for 35 minutes.
  2. Once the timer goes off, carefully release the pressure using the quick-release method.
  3. Open the lid and stir in the frozen peas if desired.
  4. Let the stew sit for a few minutes to thicken.
  5. Taste and adjust seasoning if necessary.
