Irish Stew with Mashed Potatoes

Ingredients
  

For the Irish Stew
  • 2 pounds beef stewing meat (chuck or round, cut into 1-inch cubes) Use chuck or round cuts for best results.
  • 4 cups beef broth
  • 2 medium onions, chopped
  • 4 large carrots, sliced
  • 3 medium potatoes, chopped
  • 2 tablespoons olive oil For browning the beef.
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 leaf bay leaf
  • Salt and pepper to taste
  • 1 cup stout beer (optional) Can substitute with more beef broth for a non-alcoholic version.
  • Fresh parsley for garnish
For the Mashed Potatoes
  • 2 pounds potatoes, peeled and chopped
  • ½ cup heavy cream (or milk for a lighter version)
  • 4 tablespoons butter
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat the olive oil in a heavy-bottomed pot over medium heat.
  2. Add the beef cubes in batches and brown them on all sides. Remove from pot and set aside.
  3. In the same pot, add onions and sauté until translucent, about 5 minutes. Stir in garlic and cook for another minute.
  4. Add tomato paste, stirring well to incorporate and cook for 1 minute.
Cooking the Stew
  1. Return the beef to the pot, pour in stout beer (if using), and deglaze the pot.
  2. Add beef broth, carrots, potatoes, thyme, rosemary, bay leaf, salt, and pepper.
  3. Bring to a gentle boil, then reduce heat to a simmer, covering partially. Cook for 1.5 to 2 hours.
  4. Stir occasionally, ensuring it doesn't stick to the bottom; cook until beef is fork-tender.
Mashed Potatoes
  1. Boil chopped potatoes in salted water until tender, about 15 to 20 minutes. Drain.
  2. Return potatoes to pot over low heat for a few minutes to evaporate excess moisture.
  3. Mash potatoes with butter and cream until smooth; season with salt and pepper.
Serving
  1. Remove bay leaf from the stew, taste for seasoning, and serve hot in bowls topped with fresh parsley and mashed potatoes on the side.

Notes

This stew can be made a day in advance for deeper flavors. Leftovers are perfect for one-pot meals. Freezes well. Consider adding red pepper flakes for heat.
