Cooking
- Bring the soup to a gentle boil, then reduce the heat to low.
- Cover and let it simmer for about 30 minutes.
- Carefully remove the chicken, shred it using two forks, and return it to the pot.
- Add the chopped kale or spinach and simmer for another 10 minutes.
- Taste and adjust with salt and pepper if needed.
- Ladle into bowls and garnish with fresh basil and Parmesan, if desired.
