Ingredients
  

For the Soup
  • 1 pound Italian sausage (hot or mild) Based on your preference.
  • 1 can (15 oz) white beans (cannellini or great northern) Drained and rinsed.
  • 1 medium onion Diced.
  • 2 cloves garlic Minced.
  • 2 medium carrots Diced.
  • 2 stalks celery Diced.
  • 1 can (14.5 oz) diced tomatoes With their juices.
  • 4 cups chicken or vegetable broth
  • 2 cups kale or spinach Chopped.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper To taste.
  • Olive oil For sautéing.

Method
 

Preparation
  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add diced onions, carrots, and celery. Sauté until softened and onions are translucent, about 5-7 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Add Italian sausage and break it into crumbles. Cook until browned and cooked through, about 7-10 minutes.
  5. Stir in drained white beans and canned tomatoes (with juices) into the pot.
  6. Pour in broth, sprinkle oregano and thyme, and bring to a simmer. Let bubble gently for about 20 minutes.
  7. Stir in chopped kale or spinach and cook until wilted, about a few minutes.
  8. Season with salt and pepper to taste.

Notes

This soup is great for meal prep and can be stored in the fridge for up to 4 days. It also freezes well. Can substitute Italian sausage for ground turkey or plant-based sausage. Feel free to add other vegetables or adjust spices to your liking.
