Preparation
- Heat a splash of olive oil in a large pot over medium heat.
- Add diced onions, carrots, and celery. Sauté until softened and onions are translucent, about 5-7 minutes.
- Add minced garlic and sauté for an additional minute.
- Add Italian sausage and break it into crumbles. Cook until browned and cooked through, about 7-10 minutes.
- Stir in drained white beans and canned tomatoes (with juices) into the pot.
- Pour in broth, sprinkle oregano and thyme, and bring to a simmer. Let bubble gently for about 20 minutes.
- Stir in chopped kale or spinach and cook until wilted, about a few minutes.
- Season with salt and pepper to taste.

Notes
This soup is great for meal prep and can be stored in the fridge for up to 4 days. It also freezes well. Can substitute Italian sausage for ground turkey or plant-based sausage. Feel free to add other vegetables or adjust spices to your liking.
