Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the flour, milk, eggs, baking powder, and a pinch of salt and pepper until smooth.
  3. Add in olive oil and mix well, followed by the sliced zucchini. Optionally include grated Parmesan.
Cooking
  1. Pour the mixture into a greased baking dish, ensuring the zucchini is evenly distributed.
  2. Bake for about 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.

  1. Allow to cool for a few minutes before slicing into squares. Serve warm or at room temperature.
