  • 12 pieces fresh jalapeños Look for firm ones for a good crunch.
  • 8 oz cream cheese, softened Can use low-fat or vegan cream cheese.
  • 1 cup shredded cheddar cheese Sharp for extra flavor.
  • 1/2 cup cooked bacon, crumbled Optional – try tempeh bacon for a vegan version.
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper Adjust to taste.
  • to taste Salt and pepper
  • Olive oil spray or cooking spray For baking.
Optional Garnishes
  • Chopped fresh cilantro
  • Sliced green onions
  • Sour cream or Greek yogurt For dipping.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño in half lengthwise and scoop out the seeds and membranes.
  3. In a mixing bowl, combine cream cheese, shredded cheddar cheese, crumbled bacon (if using), garlic powder, onion powder, cayenne pepper, salt, and pepper.
  4. Mix until well combined to create a creamy filling.
Stuffing and Baking
  1. Stuff each jalapeño half generously with the cheese mixture.
  2. Place them on a baking sheet lined with parchment paper and lightly spray the tops with olive oil.
  3. Bake for about 20-25 minutes or until golden and bubbly.

Notes
