  • 12 large jalapeño peppers (fresh, and reasonably firm)
  • 8 oz cream cheese (softened; can substitute with vegan cream cheese)
  • 1 cup shredded cheddar cheese (or your favorite cheese blend)
  • 1/2 cup breadcrumbs (for topping; panko works great)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: bacon bits for extra flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño in half lengthwise and remove the seeds and membranes to tone down the heat.
  3. In a mixing bowl, combine cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper until creamy and smooth.
  4. Fill each jalapeño half with the cheese mixture, ensuring they are generously packed.
  5. Spread breadcrumbs over the tops and sprinkle bacon bits if desired.
Baking
  1. Place the stuffed poppers on a baking sheet lined with parchment paper.
  2. Bake for 20-25 minutes until tender and golden brown.
  3. Allow to cool for a few minutes before serving.
