Ingredients

For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • Optional fresh herbs for garnish (like parsley or cilantro)

Method

Preparation
  1. Fire up your grill, preheating it to medium-high heat.
  2. In a medium bowl, whisk together the olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  3. Place the chicken breasts in a ziplock bag or shallow dish and pour the marinade over them, ensuring they are well coated.
  4. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, ideally for a few hours.
Cooking
  1. Wipe excess marinade off the chicken to prevent flare-ups on the grill.
  2. Place the chicken on the grill, cooking for about 6-7 minutes on each side until the internal temperature reaches 165°F.
  3. Let the chicken rest for about 5 minutes before slicing to redistribute the juices.
