For the Dressing
  • 1/2 cup Greek yogurt (or a dairy-free alternative)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (about one lemon)
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • Salt and pepper to taste

Method
 

Preparation
  1. Start by washing and drying your kale thoroughly; moisture can weigh it down.
  2. Once your kale is dry, remove the tough stems and tear it into bite-sized pieces. If you're using pre-chopped kale, skip this step!
  3. In a large mixing bowl, toss the kale with a drizzle of olive oil and a sprinkle of salt, massaging it gently with your hands.
Making the Dressing
  1. In a separate bowl, combine the Greek yogurt, olive oil, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper.
  2. Whisk until smooth—taste it and adjust the seasoning if needed.
Assembly
  1. Pour the dressing over your kale and toss until every leaf is coated.
  2. Add your croutons and grated Parmesan cheese, gently mixing until everything is well incorporated.
  3. Serve immediately for the best texture, or keep the dressing separate until just before serving to prevent sogginess.
