For the Caesar Dressing
  • 1/4 cup Greek yogurt Use dairy-free yogurt for a vegan option.
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce Substitute with soy sauce for vegetarian option.
  • 1 clove garlic (minced)
  • Salt and pepper To taste.

Preparation
  1. Remove the thick stems from the kale and chop the leaves into bite-sized pieces. Rinse them thoroughly under cold water, and then dry them in a salad spinner or pat them gently with a kitchen towel.
  2. In a bowl, combine Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, and minced garlic. Whisk them together until smooth and creamy.
  3. Taste the dressing and adjust seasonings with salt or lemon juice as needed.
Assembly
  1. In a large salad bowl, toss the kale leaves with the Caesar dressing until evenly coated.
  2. Gently add croutons and toss to combine without making them soggy.
  3. Sprinkle grated Parmesan on top or use nutritional yeast for a vegan option. If using, add halved cherry tomatoes.
  4. Serve immediately and enjoy!
