  • 1 cup unsweetened coconut milk Canned or carton
  • 1/2 cup strawberries Hulled and sliced
  • 1-2 tablespoons monk fruit sweetener Adjust to taste
  • 1/2 cup ice For serving
  • 1/4 cup sparkling water or unsweetened coconut water For an extra refreshing kick

  • a few fresh mint leaves For garnish

Method
 

Preparation
  1. In a blender, add the sliced strawberries and monk fruit sweetener. Blend until it becomes a vibrant puree.
  2. Pour in the coconut milk and blend again until everything is well mixed.
  3. Take a clear glass, add the ice, and gently pour in the strawberry-coconut blend.
  4. Top it off with sparkling water or coconut water, and garnish with fresh mint leaves if desired.
