Preparation
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch pan or line it with parchment paper, leaving some overhang for easy removal later.
- In a large mixing bowl, combine the rolled oats and chopped nuts. Stir to mix everything.
- In a separate bowl, blend together the nut butter, honey (or maple syrup), brown sugar, and vanilla extract until you form a gooey mixture.
- Stir the gooey mixture into the oats and nuts until everything is well-coated and mixed together.
- Fold in your choice of dried fruit and chocolate chips.
- Transfer the mixture into your prepared pan and press it down firmly.
- Bake in the oven for about 25-30 minutes until the edges are golden brown and the middle is set.
- Allow to cool completely in the pan on a wire rack before using the parchment overhang to lift it out. Cut into bars of your desired size.
