  • 2 cups rolled oats Quick oats can work, but rolled oats provide a better texture.
  • 1 cup nut or seed butter Peanut butter, almond butter, or sunflower seed butter are all great choices!
  • 1/2 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 cup packed brown sugar Feel free to reduce the amount for less sweetness.
  • 1/2 tsp vanilla extract Adds a lovely aromatic touch!
  • 1/2 cup chopped nuts Such as almonds, walnuts, or pecans.
  • 1 cup dried fruit Like cranberries, raisins, or apricots; remember to chop larger fruits.
  • 1/2 cup chocolate chips Optional, but they add a lovely indulgent layer!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch pan or line it with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, combine the rolled oats and chopped nuts. Stir to mix everything.
  3. In a separate bowl, blend together the nut butter, honey (or maple syrup), brown sugar, and vanilla extract until you form a gooey mixture.
  4. Stir the gooey mixture into the oats and nuts until everything is well-coated and mixed together.
  5. Fold in your choice of dried fruit and chocolate chips.
  6. Transfer the mixture into your prepared pan and press it down firmly.
  7. Bake in the oven for about 25-30 minutes until the edges are golden brown and the middle is set.
  8. Allow to cool completely in the pan on a wire rack before using the parchment overhang to lift it out. Cut into bars of your desired size.

Notes
