  • 1.5 lbs lamb (shoulder or leg), cut into bite-sized pieces
  • 1 large onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 2 medium tomatoes, chopped
  • 1 can coconut milk
  • 2 tablespoons cooking oil (vegetable or coconut)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)

  • Fresh cilantro leaves for garnish

Method
 

Cooking
  1. Heat oil in a large pot over medium heat.
  2. Add the cumin seeds and let them sizzle until fragrant.
  3. Toss in the onions and sauté until golden brown.
  4. Stir in the minced garlic and grated ginger, cooking for a minute.
  5. Add the chopped tomatoes along with the coriander and turmeric powders.
  6. Cook until the tomatoes soften and blend with the spices.
  7. Introduce the lamb pieces and sear them until browned on all sides.
  8. Pour in the coconut milk and bring to a gentle simmer.
  9. Allow the lamb to cook low and slow for about 1.5 hours or until fork-tender.
  10. Before serving, sprinkle in the garam masala and chili powder.
  11. Stir well and let it simmer for an additional 10 minutes.
  12. Taste and adjust salt if necessary.
