Method
Preparation of the crust
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Press this mixture evenly into the bottom of a 9-inch springform pan.
- Bake it for about 10 minutes until it’s lightly golden.
- Take it out of the oven and let it cool while you prepare the filling.
Preparing the filling
- In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy.
- Gradually add in the sugar, mixing until fully incorporated.
- Blend in the sour cream and beat until there are no lumps.
- Add in the eggs one at a time, mixing at a low speed to keep the air in.
- Incorporate the lemon zest, freshly squeezed lemon juice, and vanilla extract.
- Mix until everything is well combined, but be careful not to overmix.
Baking the cheesecake
- Pour the filling into the cooled crust.
- Bake in the oven for about 50-60 minutes, until the edges are set but the center still jiggles slightly.
- Turn off the oven and crack the door ajar, letting it cool gradually for about an hour.
- After that, transfer it to the fridge to chill for at least 4 hours, or ideally overnight.
