Lemon Curd Tartlets

Delightful tartlets filled with a tangy lemon curd, encased in a buttery flaky crust—perfect for any gathering or to brighten your day!

Ingredients
  

For the tartlet crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 large egg yolk (or 1 tbsp cold water, for vegan option) Use cold water instead of egg yolk for a vegan version.
For the lemon curd
  • 1/2 cup fresh lemon juice (about 3-4 lemons)
  • 2 pieces zest of 2 lemons
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, chopped into pieces (or coconut oil for vegan, solid at room temp) Use coconut oil as a vegan substitute.

Method
 

Preparation of Crust
  1. In a mixing bowl, whisk together the flour and powdered sugar.
  2. Add the chilled butter and mix until it resembles coarse crumbs. You may also use a food processor for quick mixing.
  3. Add in the egg yolk (or cold water) and mix just until the dough comes together. Do not over-knead.
  4. Shape the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for about 30 minutes.
Preparation of Lemon Curd
  1. In a saucepan over medium heat, combine the lemon juice, zest, sugar, and eggs. Whisk until combined.
  2. Cook until the mixture starts to thicken, about 10 minutes, keeping an eye to prevent scrambling.
  3. Once thick enough to coat the back of a spoon, remove from heat and stir in the butter until melted and integrated.
Baking and Assembly
  1. Preheat your oven to 350°F (175°C).
  2. After chilling the dough, roll it out on a lightly floured surface to about 1/4 inch thick.
  3. Use a cookie cutter to cut out circles and gently press them into a muffin tin.
  4. Bake the tartlet shells for 12-15 minutes, or until lightly golden. Let them cool completely before adding the lemon curd.
  5. Once the shells have cooled, fill them with the lemon curd and refrigerate for at least an hour before serving.

Notes

These tartlets can be prepared a day in advance. Store in an airtight container at room temperature. For a gluten-free option, use almond or coconut flour. Experiment with different citrus for unique flavors.
