Ingredients
  

Pasta salad base
  • 12 oz pasta of your choice (penne or fusilli work great)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1/3 cup olive oil
  • 1/4 cup Dijon mustard
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste
  • Optional: feta cheese or chickpeas for added protein

Preparation
  1. Start by cooking the pasta according to the package instructions until al dente. Once cooked, drain and rinse the pasta under cold water.
  2. While the pasta cooks, prepare the dressing by whisking together olive oil, Dijon mustard, fresh lemon juice, salt, and pepper in a medium bowl until well combined.
  3. Once the pasta is cooled, combine it in a large bowl with cherry tomatoes, cucumber, red onion, and parsley. Pour the dressing over the salad and toss gently to coat.
  4. Adjust the seasoning with more salt and pepper as needed, and add optional feta cheese or chickpeas if desired.
