  • 1 pound large shrimp, peeled and deveined Substitutions: use chicken or firm tofu for a different protein.
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces Broccoli can be used instead.
  • 3 tablespoons olive oil Melted butter can be used for a richer flavor.
  • 4 cloves garlic, minced
  • 1 whole lemon, zested and juiced Fresh is best, but bottled lemon juice works in a pinch.
  • Salt and pepper, to taste
  • Optional: red pepper flakes for a kick, fresh parsley for garnish

Method
 

Preparation
  1. Warm the olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Toss in the asparagus pieces and sauté for 2 to 3 minutes until bright green and slightly tender.
  4. Add the shrimp in a single layer for even cooking.
  5. Cook the shrimp for about 3 minutes on one side until pink, then flip and add lemon juice and zest, followed by salt and pepper.
  6. Cook for another 2 to 3 minutes until the shrimp are fully cooked and opaque.
  7. Remove from heat and add red pepper flakes if desired.
  8. Garnish with chopped parsley before serving.
