  • 1 medium Onion Diced
  • 2-3 tablespoons Fresh herbs Chopped thyme and parsley
  • 2 tablespoons Olive oil

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Incorporate the minced garlic for an additional 30 seconds.
Cooking
  1. Season the chicken with salt and pepper, then browning the pieces in the pot for about 5-7 minutes.
  2. Remove the chicken and set aside.
  3. Stir in the rice, toasting it slightly for 1-2 minutes.
  4. Pour in the chicken broth, lemon juice, and lemon zest, stirring to combine.
  5. Return the chicken to the pot, ensuring it’s submerged in the liquid.
  6. Bring to a gentle boil, then reduce heat to low, cover, and let it simmer for about 20 minutes or until the rice is cooked.
  7. Sprinkle the fresh herbs over the top just before serving.

Notes
