  • 1 cup lentils (green or brown; red works too)
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 4 cups vegetable or chicken broth homemade for an extra touch
  • 1 leaf bay leaf
  • 1 can diced tomatoes (14 oz, with juices)
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh parsley or cilantro optional

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  3. Stir in the minced garlic, cumin, and smoked paprika; cook for another minute.
Cooking
  1. Add the lentils, diced tomatoes, broth, and bay leaf; stir to combine and bring to a gentle boil.
  2. Once boiling, lower the heat and let it simmer uncovered for 30-40 minutes, or until lentils are soft.
  3. Occasionally stir to prevent sticking and check for doneness.
  4. Remove the bay leaf and blend half of the soup until creamy, then mix back with the rest.
  5. Adjust seasoning with salt and pepper before serving.
Serving
  1. Ladle the soup into bowls and garnish with fresh parsley or cilantro.
  2. Serve with crusty whole-grain bread or a side salad.
