  • 8 ounces fettuccine or penne pasta Whole wheat or gluten-free pasta can be used.
  • 2 boneless skinless chicken breasts chicken breasts Can be substituted with firm tofu for a plant-based option.
  • 2 tablespoons Cajun seasoning Homemade or store-bought.
  • 1 tablespoon olive oil Vegetable oil can be used as an alternative.
Vegetables
  • 1 red bell pepper sliced red bell pepper Other colors work perfectly.
  • 1 yellow bell pepper sliced yellow bell pepper Adds color and sweetness.
  • 3 cloves minced garlic Fresh garlic enhances the flavor.
Sauce Ingredients
  • 1 cup heavy cream Can substitute with coconut or almond milk for a lighter version.
  • 1 cup grated Parmesan cheese Nutritional yeast can be used for a vegan option.
  • Salt and pepper to taste
Garnish
  • Fresh parsley for garnish Optional, for a burst of color and freshness.

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water, then cook the pasta until al dente according to package directions.
Cooking the Chicken
  1. Heat a large skillet over medium heat and add the olive oil.
  2. Season the chicken breasts with Cajun seasoning and sauté for about 5-7 minutes on each side until cooked through.
  3. Remove the chicken from the skillet and let it rest before slicing into bite-sized pieces.
Making the Sauce
  1. In the same skillet, add the sliced bell peppers and sauté until just tender, about 3-5 minutes.
  2. Add minced garlic and stir until fragrant, about 30 seconds.
  3. Pour in the heavy cream and simmer gently, stirring in the Parmesan cheese until melted and creamy.
  4. Add the cooked pasta and sliced chicken, coating everything in the sauce.
Serving
  1. Serve the Louisiana Chicken Pasta hot, garnished with fresh parsley.
