Make-Ahead Spinach and Cheese Frittata and Zesty Fruit Salad

Ingredients
  

For the Frittata
  • 10 large large eggs Use fresh eggs for best results.
  • 1 cup whole milk (or almond milk for a dairy-free option) Substitute with almond milk if dairy-free.
  • 2 cups fresh spinach (or frozen) Frozen spinach can be used if pressed for time.
  • 1 cup shredded cheese (cheddar, feta, or vegan cheese) Choose cheese according to preference.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing
For the Zesty Fruit Salad
  • 2 cups strawberries, hulled and sliced
  • 2 cups blueberries
  • 2 cups pineapple, chopped
  • 1 cup grapes, halved
  • 1 Juice of 1 lime
  • 2 tbsp honey or agave syrup (optional) Use honey or agave as sweetener, if needed.

Method
 

Prepare the Frittata
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, drizzle olive oil and sauté the diced onion until soft and translucent.
  3. Add minced garlic and spinach, cooking until the spinach wilts, about 2 minutes.
  4. In a bowl, whisk together eggs and milk, seasoning with salt and pepper.
  5. Spread the cooked veggies evenly in the skillet, pour egg mixture over, and sprinkle cheese on top.
  6. Gently stir to combine and transfer the skillet to the oven.
  7. Bake for 25-30 minutes, or until set and lightly golden on the edges.
  8. Remove from the oven and let cool before slicing into wedges.
Prepare the Fruit Salad
  1. In a large mixing bowl, combine all sliced fruits.
  2. Drizzle with lime juice and honey, if using.
  3. Gently toss everything together until mixed.
  4. Serve in a large bowl or individual cups.

Notes
