Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Gently pound the chicken to an even thickness of about half an inch.
  3. In a bowl, combine the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth and creamy.
  4. Sprinkle the panko breadcrumbs on a plate.
Cooking
  1. Spread a generous layer of the creamy sauce on each seasoned chicken breast, then coat both sides with panko breadcrumbs.
  2. Arrange the coated chicken in a greased baking dish and top with diced ham and shredded mozzarella.
  3. Bake for 25-30 minutes or until chicken is golden brown and cooked through (internal temperature of 165°F/75°C).
