  • 2 ripe mangoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (about 13.5 ounces) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Optional: chili flakes for a spicy kick

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger; cook for about a minute.
  4. Add the chicken cubes and cook until browned on all sides, about 5-7 minutes.
  5. Sprinkle in the curry powder, mixing until the chicken is coated.
  6. Pour in the coconut milk and diced mangoes. Stir to combine and bring to a gentle simmer.
  7. Simmer for about 10 minutes, until the chicken is thoroughly cooked.
  8. Season with salt and pepper to taste. Add chili flakes if desired.
  9. Garnish with fresh cilantro before serving.

Notes
