- Make sure you’ve cooked your rice ahead of time, as day-old rice lends itself to the best texture.
- Heat a large skillet or wok over medium-high heat.
- Add the sesame oil if using, and let it heat up.
- Toss in the diced chicken and sauté for a few minutes until warmed through.
- Push the chicken to one side of the pan and pour the beaten eggs onto the other side, letting them cook until starting to set, then gently scramble.
- Introduce the chopped carrots and peas, stirring for 2-3 minutes until softened.
- Add the cooked rice and diced mango, pour the soy sauce over everything, and toss to combine.
- Taste and adjust salt and pepper to your liking, then sprinkle with green onions before serving.
