  • 2 cups cooked jasmine rice preferably day-old for better texture
  • 1 cup diced, cooked chicken rotisserie works beautifully
  • 1 unit ripe mango peeled and diced, fresh or frozen is fine
  • 1/2 cup frozen peas
  • 1/2 cup carrots finely diced
  • 2 units eggs beaten
  • 3 tablespoons soy sauce or tamari for a gluten-free option
  • 1 tablespoon sesame oil optional for extra flavor
  • 2 units green onions sliced for garnish
  • Salt and pepper to taste
  • Lime wedges for serving

Method
 

Preparation
  1. Make sure you’ve cooked your rice ahead of time, as day-old rice lends itself to the best texture.
  2. Heat a large skillet or wok over medium-high heat.
  3. Add the sesame oil if using, and let it heat up.
  4. Toss in the diced chicken and sauté for a few minutes until warmed through.
  5. Push the chicken to one side of the pan and pour the beaten eggs onto the other side, letting them cook until starting to set, then gently scramble.
  6. Introduce the chopped carrots and peas, stirring for 2-3 minutes until softened.
  7. Add the cooked rice and diced mango, pour the soy sauce over everything, and toss to combine.
  8. Taste and adjust salt and pepper to your liking, then sprinkle with green onions before serving.
