Ingredients
  

For the Sticky Rice
  • 1 cup glutinous rice Also known as sticky rice.
  • 4 to 6 hours soaking time Soak the rice until the water runs clear.
For the Coconut Sauce
  • 1.5 cups coconut milk
  • 0.5 cup sugar Adjust to taste.
  • 0.5 teaspoon salt
  • 0.25 cup reserved coconut sauce For drizzling later.
For Serving
  • 2 ripe mangoes, sliced
  • sesame seeds or mung beans Optional garnish.
  • splash vanilla extract or pandan extract Optional flavor twist.

Method
 

Preparation
  1. Rinse the glutinous rice under cold water until the water runs clear to remove excess starch.
  2. Soak the rice in water for 4 to 6 hours, or overnight if possible.
Cooking
  1. Drain the rice and transfer it to a steamer basket lined with cheesecloth.
  2. Fill a pot with water and bring it to a gentle simmer. Place the steamer over the pot, cover with a lid, and let it steam for about 30 minutes, until the grains are tender and translucent.
  3. In a saucepan over medium heat, combine the coconut milk, sugar, and salt. Stir gently until the sugar dissolves, but do not boil it.
  4. Reserve about 1/4 cup of the coconut sauce for drizzling later.
  5. Once the rice is cooked, transfer it to a bowl and pour in the remaining coconut sauce. Stir gently to combine and cover the bowl, letting it sit for about 15 minutes.
Serving
  1. On a plate, create a mound of sticky rice alongside sliced mango.
  2. Drizzle the reserved coconut sauce over the top and garnish with sesame seeds or mung beans if desired.
