Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
For the Cream Sauce
  • 3 cloves garlic, minced
  • 1 cup heavy cream for a lighter version, swap with half and half or coconut cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • ¼ cup sun-dried tomatoes, chopped oil-packed for extra flavor
  • Fresh basil leaves, for garnish feel free to use spinach if basil isn't available
For the Pasta
  • 8 oz fettuccine or your favorite pasta
  • Water and salt for boiling

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.
Cooking the Chicken
  1. Season both sides of each chicken breast with salt and pepper.
  2. In a large skillet over medium-high heat, warm the olive oil until shimmering.
  3. Carefully place the chicken breasts in the skillet and cook for about 5-7 minutes on each side, or until golden brown and no longer pink in the middle.
  4. Remove the chicken from the skillet and allow it to rest, then slice it into bite-sized pieces.
Making the Cream Sauce
  1. In the same skillet, toss in the minced garlic and sauté until fragrant, about 30 seconds.
  2. Pour in the heavy cream and chicken broth, stirring to combine, and let it simmer for about 3-5 minutes to thicken.
  3. Add the Italian seasoning, sun-dried tomatoes, and Parmesan cheese, stirring until the cheese is melted.
  4. Toss in your cooked pasta, allowing it to absorb the sauce, then fold in the sliced chicken, mixing gently.
