Ingredients

For the Crust
  • 1.5 cups 1 ½ cups graham cracker crumbs (or gluten-free crumbs)
  • 0.5 cups ½ cup unsalted butter, melted
  • 2 tablespoons 2 tablespoons granulated sugar
For the Filling
  • 16 oz 16 oz cream cheese, softened
  • 1 cup 1 cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cup 1 cup marshmallow fluff
  • 1 cup 1 cup heavy whipping cream
  • 1 pinch Pinch of salt

Method

Preparation of the Crust
  1. Mix the graham cracker crumbs, melted butter, and sugar in a bowl until it resembles wet sand.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan to create a solid base.
  3. Bake at 350°F (175°C) for about 8 minutes, just until lightly golden.
  4. Let it cool while you prepare the filling.
Preparation of the Filling
  1. In a large mixing bowl, beat the softened cream cheese until it’s creamy and smooth.
  2. Add the powdered sugar and vanilla extract, continue to beat until well combined.
  3. Fold in the marshmallow fluff, ensuring everything is well blended and fluffy.
  4. In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
  5. Pour the filling onto the cooled crust, smoothing it with a spatula.
Chilling
  1. Chill for at least four hours or overnight.
  2. When ready to serve, carefully remove the cheesecake from the springform pan, slice, and enjoy.

Notes

For a chocolate twist, consider using chocolate graham crackers for the crust or swirl some fruit preserves into the cheesecake filling for a fruity note. Store leftovers in an airtight container in the refrigerator for up to five days.
