  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons sugar
For the Matcha Cheesecake Filling
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 teaspoons matcha powder Plus extra for garnish
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

  • Mint leaves for decoration

Method
 

Preparation of the Crust
  1. In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar.
  2. Press the mixture firmly into the base of a springform pan.
  3. Move it to the fridge while you whip up the filling.
Preparation of the Filling
  1. In a separate bowl, mix the cream cheese and powdered sugar until smooth, ensuring there are no lumps.
  2. Gradually fold in the heavy whipping cream, followed by the matcha powder, vanilla extract, and lemon juice.
  3. Once the mixture is smooth, pour it over the chilled crust.
Chilling
  1. Chill the cheesecake in the fridge for at least four hours, but overnight is recommended.
Serving
  1. Carefully remove the cheesecake from the springform pan and garnish with a dusting of matcha powder and fresh berries.
