Ingredients
  

Vegetable Base
  • 4 cups fresh broccoli florets Chop into bite-sized pieces.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 2 cloves garlic, minced
Seasoning and Toppings
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for a vegan option.
  • 2 tablespoons olive oil
  • optional crushed red pepper flakes for heat

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the broccoli florets into bite-sized pieces.
Mixing
  1. In a large mixing bowl, combine the chopped broccoli, cherry tomatoes, diced red onion, and minced garlic.
  2. Drizzle olive oil over the vegetables and toss well.
  3. Season the mixture with oregano, basil, smoked paprika, salt, and pepper. Optionally, add crushed red pepper flakes.
Baking
  1. Transfer the vegetable mix into a greased baking dish and spread it out evenly.
  2. Sprinkle grated Parmesan cheese over the top.
  3. Bake in the oven for 20-25 minutes until the broccoli is tender and the cheese is melted and golden.
  4. Let sit for a few minutes before serving.
