  • 4 pieces bone-in, skin-on chicken thighs
  • 2 cups cherry tomatoes, halved
  • 1 piece bell pepper, sliced (red or yellow)
  • 1 small zucchini, sliced
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup olive oil Divided for use
  • 1 piece Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Drizzle half of the olive oil in a large roasting pan, swirling to coat the bottom.
  3. Pat the chicken thighs dry with paper towels and season generously with salt, pepper, oregano, and smoked paprika.
  4. Arrange the seasoned chicken thighs skin-side up in the pan.
Cooking
  1. Cook the chicken for about 20 minutes until the skin is golden.
  2. In a mixing bowl, combine cherry tomatoes, bell pepper, zucchini, red onion, minced garlic, and olives. Drizzle in the remaining olive oil and lemon juice, tossing until coated.
  3. After 20 minutes, add the veggie mix to the pan, arranging around the chicken.
  4. Return the pan to the oven and roast everything for an additional 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Remove the pan from the oven and let it sit for a few minutes.
  2. Sprinkle with fresh parsley before serving.

Notes
