Mediterranean Pasta Salad

Ingredients
  

Pasta
  • 3 cups 3 cups of rotini or penne Whole wheat or gluten-free options work well!
Vegetables
  • 1 cup 1 cup cherry tomatoes, halved
  • 1 medium 1 medium cucumber, diced (English cucumbers are great for less seed)
  • ½ medium ½ medium red onion, finely chopped
  • 1 cup 1 cup black olives, sliced (Kalamata for a bolder flavor)
  • 1 cup 1 cup bell peppers, diced (any color you like)
  • ½ cup ½ cup fresh parsley, chopped (basil is a lovely substitute)
Dressing
  • ½ cup ½ cup olive oil
  • ¼ cup ¼ cup lemon juice, freshly squeezed (adds a lovely zing)
  • to taste Salt and pepper
  • 1-2 teaspoons 1-2 teaspoons Italian seasoning (optional, but oh-so-good!)
Toppings
  • 1 cup 1 cup feta cheese, crumbled (substitute with tofu for a vegan option)

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente.
  2. Drain and rinse the pasta under cold water to stop the cooking process.
  3. Chop the veggies: bell peppers, cherry tomatoes, cucumber, and finely chop red onion.
Mixing and Dressing
  1. In a large bowl, combine the cooled pasta and all the chopped ingredients.
  2. Whisk together the olive oil, lemon juice, salt, pepper, and Italian seasoning in a separate bowl.
  3. Drizzle the dressing over the pasta and vegetables and toss gently to coat all the ingredients.
  4. Sprinkle crumbled feta on top (and olives too, if using) and give everything a final toss.
Chilling
  1. Let the salad rest in the fridge for at least 30 minutes before serving to allow the flavors to meld.

Notes

Feel free to add crushed red pepper for spice, toasted pine nuts or walnuts for crunch. Use pre-chopped veggies to shorten prep time.
