Cooking the Onions
- Heat a large skillet over medium-low heat and add your butter or olive oil.
- Once melted, add the sliced onions and stir to coat them in the fat.
- Cook the onions low and slow for about 30-40 minutes, stirring occasionally until they are golden brown.
- If the onions start to stick, add a splash of water to loosen them.
- After about 15 minutes, add salt and black pepper to season.
- In the last 5 minutes, drizzle in balsamic vinegar if using for added flavor.
- Once the onions are soft and caramelized, remove them from heat and let them rest for a moment.

For deeper flavor, consider adding a splash of white wine or a pinch of sugar. Melting onions can be made a day in advance and stored in the fridge for up to a week, or frozen for about 3 months.
