Method
Preparation
- Toast the guajillo and ancho peppers in a dry skillet over medium heat for about 1-2 minutes until fragrant.
- Place the toasted peppers in a blender along with onion, garlic, apple cider vinegar, oregano, cumin, black pepper, and a pinch of salt.
- Pour in about a cup of beef broth to help blend everything smoothly into a thick paste.
Cooking
- Cut the beef into large chunks and use the sauté function on your Instant Pot to brown the meat for a few minutes on each side.
- Pour the spicy paste over the beef and add the remaining beef broth, ensuring everything is well coated.
- Seal the Instant Pot and set it to cook on high pressure for 45 minutes.
- Once the timer goes off, let the pressure release naturally for about 10 minutes before flipping the valve.
- Check the meat; it should be fall-apart tender. If not, give it a few more minutes.
Assembly
- Dip a tortilla into the broth before adding the beef to enhance the flavor.
- Top the tacos with chopped cilantro, onions, and a squeeze of lime juice.
