Mexican Street Corn Pasta Salad

Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta (your choice, but rotini or farfalle recommended) Choose your preferred type of pasta
  • 2 cups fresh corn Can use canned or frozen corn (drained)
  • 1 cup cherry tomatoes, halved
  • 1 piece bell pepper (red or yellow), diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped Optional; can omit
Dressing
  • 1/3 cup crumbled feta cheese Can substitute with cotija cheese for authenticity
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice Freshly squeezed is best
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

Cooking Pasta and Corn
  1. Boil a pot of water and cook the pasta according to package instructions until al dente.
  2. In a skillet over medium heat, add corn and cook until golden charred for about 5-7 minutes.
Combining Ingredients
  1. Once the pasta is cooked, drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, charred corn, cherry tomatoes, bell pepper, red onion, and cilantro.
  3. In a separate small bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta and veggies, tossing to coat well, and sprinkle crumbled feta on top.

Notes
