  • 3 tablespoons milk (or almond milk for a vegan option)
  • 1 tablespoon vegetable oil (or melted coconut oil)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice (or a mix of cinnamon and nutmeg)
Optional Add-ins

Method
 

Preparation
  1. Gather your favorite oversized mug.
  2. In the mug, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the pumpkin puree, milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until smooth.
  4. Sprinkle in the pumpkin pie spice and stir to blend.
  5. If desired, fold in chocolate chips or nuts.
Cooking
  1. Pop the mug into the microwave for about 60 to 80 seconds.
  2. Keep an eye on your cake as it cooks; stop when it's set but still slightly moist in the middle.
